This is such a simple yet so delicious salad and a perfect accompaniment for the sautéed broken wheat and can also be served as a side dish.
The ingredients required are:
1 cup Green beans ,trimmed and steamed
3 tbsp Black olives, sliced
2 Tomatoes, quartered
1 tbsp Olive oil
1 tbsp white Vinegar
Salt and pepper
2 tbsp Fresh coriander, chopped
1/4 tsp Chili flakes
The procedure is:
1. Toss all the ingredients till the oil and vinegar coats every ingredient. For an extra salty kick add the juice from the olives jar.
2. Let it sit in the fridge for a minimum of 15 minutes.
3. Serve with sautéed broken wheat (the recipe for which is on my blog too)
Steam the beans until crisp and not mushy.
Coriander can be substituted with basil for a different taste.
